Cow's Foot Soup ( Sop Kikil In Indonesia )



Cow's  foot  ( kikil  in Indonesia) soup is one of the typical food of Surabaya. This food is the main ingredient is beef veined (usually the legs), so that when eaten meat feels springy. Broth is a broth of meat, mixed with turmeric, lemon grass, fried onions and other spices. This food is served hot and mixed lime and chili sauce to taste.
Ingredients :
  • 500 g cow's foot ( but it was so kikil )
  • 1 liter of water
  • 1 bay leaves
  • 2 cm ginger, crushed
  • 1 red tomato seeds, chopped
  • 1 seed carrots, cut into pieces
Seasonings :
  • 2 tablespoons vegetable oil
  • 1 lime leaves
  • 1 stalk lemongrass, crushed
  • 10 pieces of red chili sauce
Puree :
  • 4 cloves garlic
  • 3 eggs hazelnut
  • 2 cm turmeric
  • 1 / 2 cm ginger
  • 1 / 2 cm galangal
  • 1 / 2 tsp pepper granules
  • 2 tsp salt
How to make :

  • Boil water with the bay leaves and ginger, kikil boiled until tender, add water if necessary.
  • Lift kikil, cut into small pieces.
  • Spices Stir-fry with lime leaves and lemongrass until fragrant.
  • Enter into the broth kikil.
  • Add water up to 750 ml. Add the carrots, cook over low heat until boiling.
  • Enter the red chili sauce, sliced ​​tomatoes and bring to a boil again.
  • Remove and serve while warm.
